I have just started childminding & last week started looking after a 7mth old baby girl. Now as I said (& I dont want to sound thick or incompetent!) but am I meant to be doing certain activities with her & recording them? At the mo we play with a variety of toys, go the park, shops etc, I am helping her with sitting alone, rolling over etc, but is there a rule as such I should follow? I am aware of birth to 3 but with it all changing I havent really bothered but with it & was waiting for it all to change & then to try & get on a course. (sorry to waffle on a bit). I do record what we've been doing & what progress she has made but Im not sure if thats enough?

There are no set 'rules' you sound like you are doing the right things. Keep records of what is happening with her, perhaps in an "About Me" type book, get as much info as you can on B23 and keep reading your pack.
Angel has but some good stuff on here and is also going to add more when she is feeling well enough, so that should help.
