8 x 3 loaf tin 450g ripe bananas, mashed 50g mixed nuts (OPTIONAL) 120ml sunflower oil 100g raisins 75g rolled oats (porridge) 125g Wholemeal flour 2.5ml/half teaspoon Almond or vanilla essence pinch salt
Mix ingredients together to soft moist mixture. Spoon into greased loaf tin Bake at 190c/375f/gas mark 5 for 1 hour. Cool in the tin 10 mins before turning out.
Thought this one really good as it hasn't got any eggs and would be good for children with egg allergy. Obviously you may want to consider whether or not to add the nuts - I don't , still tastes just as nice.

My hubby is a cake fiend! I'll see what he thinks to this, at least it's healthy! I do a carrot cake that is similar to this, that has banana in it too, and he like that.

I like it and I don't usually eat cake very often but perhaps that's why I like it as it doesn't taste like normal cake Have a good cook up and let me know what you think. Dee
