Easy As 123 Peanut Butter Cookies
This has got to be the easiest recipe yet for this wonderful cookie. Don't be put off by the simplicity of it...and despite challenges to the contrary, the recipe works WITHOUT flour. Ingredients
1 cup sugar 1 large egg 1 cup peanut butter (crunchy or smooth)
Instructions Combine sugar and egg in mixing bowl, stirring till smooth. Add peanut butter and mix in thoroughly.
Roll into walnut-sized balls.
Place the balls on ungreased cookie sheets at least 2" apart.
Flatten with the tines of a fork.
Turn 90 degrees and use fork again to create cross hatches.
Bake 10 minutes at medium heat (or till done). Let cool on tray for 1 minute before removing to cooling rack

Ive made the cookies more than once, for the simple reason that i keep eating them. My 12 year old son has made them and the whole family thinks they are yummy. Thanks for such a simple but great recipe idea. Lynn.

Hi Lynn
It is so nice to know that someone has made something that I have posted. I do often wonder if they are of any use to anyone
I agree with you they are really scrummy and we make them a lot every time a new child starts it is a good excuse , mind you who needs a child or an excuse haha
Glad you like them
