I haven't made this recipe for years. My eldest son used to make it regularly when he was a teenager and it really works!
All the ingredients are mixed in a blender yet when it's cooked you will have a pie with a crust on the bottom, custard filling in the middle and coconut topping!
No-one was more surprised than me when it worked!
Ingredients:
4 eggs 1 cup white sugar quarter teaspoon salt half teaspoon baking powder quarter cup margarine half cup flour 2 cups milk 1 teaspoon vanilla essence 1 cup dessicated coconut
place all the ingredients in a blender and mix together thoroughly.
Pour into a buttered 10" dish.
Bake at 350 F or 180 C or gas mark 4 for one hour
Impossible Pie - impossible but true!

Does it really turn out like that Pauline ?
I will have a go at the weekend , my daughter loves anything with coconut so I will let her taste it first

Yes it does. Although the three separate areas are not well defined and they do sort of blend into each other a bit where they 'join'
