muffins basic recipe 9oz plain flour 3 teaspoons baking powder 1/2 teaspoon salt 4-6 oz fine white sugar 1 egg 8fl oz (240ml ) milk 3fl oz (90ml ) veg oil Pre heat oven to 375-400df (190-200 C ) gas mark 5-6 add together all dry ingredients In a separate bowl beat egg with a fork then stir in milk and oil. Pour all the wet ingredients to the dry mixture stir until JUST conbined this should only take about 30 seconds.The batter will be lumpy but no dry bits left. Fill muffin tins 3/4 full Bake for 20-25 mins until lightly browned . Choc chip muffins Add 3oz of plain choc chips to the dry ingredients and 5mls of vanilla essence to the wet ingred. Nutty choc chip . same as choc chip but also add 3oz of your favourite chopped nuts .

Made these this afternoon with the mindies.. We added 2 mashed banan's and chocolate chips..
